The ageing time is around 6 months, has a fresh and delicate taste, with a pleasant aroma of the milk; the quality which gets lost during the ageing time, in favour for the well- structured and more intense taste, with an amazing aromatic complexity.

DOP Tuscan fresh Pecorino is perfect as a table cheese and can be consumed in many different ways; it is excellent for appetizers, matches with honey, jams and caramelized fruit; it is very tasty also with salads, dressed with a row of olive oil.
