The Savoury Prosciutto Gran Riserva is a cured meat, obtained with the elaboration of the salted and seasoned posterior limbs of the pork. It is identifiable by its big dimensions and part without rind, completely covered by the pepper.
To make the Savoury Prosciutto Gran Riserva, we select the big-size, fresh pork thighs, with a weight from 12kg to 15 kg, and a proper covering of the fat, which permits the seasoning until 18 months.
The salting process of this prosciutto requires a particular ability of the manufacturer, it is divided into the diverse phases, and it needs a vigorous and uninterrupted massage of the meat, in order to permit to the salt to penetrate until the thigh’s bone.
After this process, the meat has to stand for a while in refrigerating rooms, subsequently, the part of the thigh without the rind is sprinkled with the medium-minced black pepper. Afterward, the meat is hung in the aired rooms for a period ranging from 12 to 18 months.
The prosciutto is the most known cured meat in the world, and from the north to the south Italy, there are countless variants of it, from the sweetest to the most savoury.
The Savoury Prosciutto Gran Riserva has a delicate and in the same way, a complex taste, which is a result of the long and unique method of seasoning. It is more savoury than the sweet prosciutto, it matches very well with sale-free Tuscan.
