This is the “Mortadella of Gombitelli”

It’s a typical product of Versilia, a well-balanced cured meat, made from selected meat of pork loin, shoulder, neck and belly, ground according to the old recipe. The meat selection is the most important phase of the production of any salami, it consists in well-balancing the different parts of the pork.

The pork meat is coarsely ground, and the particular attention is paid on the kneading, which occurs in multiple phases.

To donate the typical flavour of the  Mortadella of Gombitelli, in the second phase of kneading we add a mixture of spices, an ancient secret of the Triglia family, in this mixture the flavour of garlic and pepper are most marked. These two spices are basic for the traditional Tuscan sausages.

It’s the most typical cured meat of the Gombitelli’s production, and its taste, highly appreciated all over the territory, is sweet and delicate, with a particularly fragrant scent.

This product has a historical value and deserves to be known by every true gourmet.

Its local name Mortadella, may derive from the “mortella”, shrubs which were burned for flavouring and dry faster the cured meat.

Historically, this cured meat was seasoned for many months, and at the end, it was tasted when too matured. In recent years the customers started to taste it a little bit mellow, even though in the cellars of the old gastronomes are still hung the Mortadella of Gombitelli, for the additional seasoning, even for many months before being consumed.

We recommend you to cut the medium-seasoned Salame Nostrale  by the knife, into rather thick slices, whereas if seasoned for many months, is better to cut in thin slices.

This cured meat perfectly matches with Tuscan bread without salt and a good red wine, for example, the Tuscan one, and it is a classical, traditional snack in Versilia.
