Prosciutto Meat salami is a little sweet and spicy salami that is low in fat. It is a good alternative that the Salumificio Artigianale Gombitelli offers its customers looking for the less salty and spicy product.
To produce the Prosciutto Meat Salami, we choose a lean and tender meat, from the pork’s thighs and add a small percentage of sweet pork belly meat; it is a medium-grained salami and during the kneading, a low quantity mixture of salt and spices are added, enough to flavour the meat, but to not cover its taste ( not the classic mixture of pepper and garlic ubiquitous in any classic Tuscan salami). In the end, the “Triglia Family” adds a touch of honey and Marsala wine, to bring out the sweet notes of this product.
Prosciutto Meat salami is stuffed into different calibres and after a brief hot drying phase, is followed by a seasoning period, that can range from four to eight weeks.
This salami has many admirers in Versilia and some of them prefer it “young”, seasoned only for a month, while the others leave it to mature in their cellars for several months before tasting it; in any moment of the seasoning period you taste the product, it will have a sweet and delicate taste, and it’s one of the cured meats which exalts the flavour of the pork meat.
This salami is great as a starter and perfect to garnish sandwiches and focaccia bread.
