The Salami with Pine Nuts is one of “flavoured salami” that Salumificio Artigianale Gombitelli has been producing continuously for many years; the flavoured salamis produced by the Gombitelli are: Salami with Pistachios, Salami with Olives, Walnuts Salami and Salami with Pine Nuts.
All these salamis have as a basis Salame Carne di Prosciutto- Prosciutto Meat Salami, a sweet and thin salami packaged with selected lean meats from pork thigh, where a part of sweet meat of bacon is added. This salami is not to much spicy, and for enhancing the sweet taste, a touch of honey and Marsala wine are added.
During the kneading, when the meat starts to tie, whole shelled pine nuts are added.
The salami with pine nuts to be ready for consumption requires at least five weeks of seasoning, which take place in ventilated rooms.
The taste of this salami matches well with the flavour of pine nuts; This salami is highly-regarded in Versilia for the buffets of appetizers and it’s a tasty and colourful alternative to put on the plates of cured meat starters.
