Walnuts Salami is one of “flavoured salami” that the Salumificio Artigianale Gombitelli has been producing continuously for many years; the flavoured salamis produced by the Gombitelli are: Salami with Pistachios, Salami with Olives, Salami with Walnuts and Salami with Pine Nuts.
All these salamis have as a basis the Prosciutto Meat Salami, a sweet and thin salami packaged with selected lean meats from pork thigh, where a part of sweet meat of bacon is added. This salami is not too spicy and for enhancing the sweet taste, a touch of honey and Marsala wine are added.
During the kneading, when the meat starts to tie, whole walnuts cut into four pieces are added.
The Salami with Walnuts to be ready for consumption requires at least five weeks maturation, which takes place in well ventilated rooms.
The taste of this salami binds well with the flavour of walnut, which is a very tasty fruit and rich with different organoleptic elements, that enriches the product with typical essential oils; This salami is highly regarded in Versilia for the buffets of appetizers, and as a tasty and colourful alternative to be put on the plates of appetizers with salami.
