The Zuppa Rustica of Bravi Andrea is a mixture of legumes and cereals ready to prepare the traditional rustic soup. All legumes of these soups are grown and dried in Garfagnana and its surrounding areas.
This spelt grown in Garfagnana, in 1996 has obtained recognition of Protected Geographical Indication (PGI). It’s cultivated between 300 and 1000m above sea level without any use of chemical fertilizers.
The company seeds and gathers the cereal, and takes care of productive procedures to obtain a perfect and genuine spelt.
The Rustic Soup is a simple dish, which reminds us the comfort food of our grandparents; you can prepare it in different ways with or without sauteed vegetables, but cause of these selected ingredients, you will always obtain the best results. We recommend you to boil it with broth and later add separately made sautè with garlic, rosemary and sage.
Rustic Soup is excellent when served over a slice of homemade bread- toasted and rubbed with garlic; a good olive oil and with a glass of red wine.
Components in varying proportions: spelt, brown rice, peeled broad beans, green and red lentils, eyed beans, blacks beans.
It needs 12-hour soak.
Keep in a cool and dry place.
