Semi-sweet prosciutto is a cured meat obtained by processing salted and seasoned pig’s back limbs.
To produce the Semi-sweet prosciutto, there are chosen medium-sized pork legs, from 8 to 11 kg.
Salting this prosciutto is a complex process, it’s divided into the several phases and requires the continuous and vigorous massage of the thigh, this allows the salt to penetrate deeply to the bone.
Salting is followed by a rest period in cold storage and at the end of it, the part of the thigh without rind is doused with a valued adrenal lard of pork. This allows prosciutto to mature for a period ranging from nine to twelve months.
The prosciutto is the most known cured meat throughout the world and in Italy from North to South there are an infinite number of variations of it, from the sweetest to the most savoury.
Semi-sweet Prosciutto has averagely sweet taste, is a very good product for the cold cuts platter, or as sandwich stuffing. It finds its place in the cuisine, is one of the essential ingredients in the preparation of tortellini and tortelli.
For the fact that this prosciutto has very little presence fat, it’s indicated for low-calorie diets, and the sandwich garnished with it is a great snack for your kids.
