Crespone Salami is the classic sweet and well seasoned salami, with a fine grain.
It is recognizable for the bright red slice, compact paste like rice grain and the sweet and delicate taste.
To produce the Crespone Salami, first of all we need to choose the right meat, the Salumificio Artigianale Gombitelli, for this cured meat selects lean, unnerved and degreased pork shoulder and pork belly; then the meat must be placed in very cold rooms, with a temperature close to zero; at this point we can process and grind the meat very finely.
After the grinding, the salt and a mix of spices are added, and Salumificio Artigianale Gombitelli, in order to give a touch of originality to this product, adds honey and Marsala wine.
Once ready, the mixture of Crespone Salami, is stuffed into a large synthetic gut, followed by a brief hot drying phase after which the Salami is hung in well-ventilated rooms between three and five months, to seasoning.
The taste of Crespone Salami is sweet and pleasant, and not very spicy; this is the salami that mothers prefer to put in the sandwiches for their children for snacks.
Crespone Salami is a salami par excellence for stuffing the sandwiches, is suitable for all types of bread but the winning combination is: Crespone and “michetta”.

Produced in a factory where dairy products and gluten-containing ingredients are not used.
It may contain traces of walnuts and pistachios.
