Lonzardo is a delicately flavored but tasty salami and is one of the latest creations born in the Gombitelli house. The dorsal muscle of the animal, lean but attached to the lard which is the fatty part of the back, is handcrafted to give life to Lonzardo.
A product with a precious flavor made even more enveloping by that fatty part that makes it perfect for many delicious occasions. The loin, with a reduced percentage of fat, is slightly dry but the Lonzardo, with its strip of natural fat, adds softness and juiciness, giving wonderful sensations on the palate.
The chosen piece is worked by the skilled and expert hands of this family of butchers who, with care and experience, massage the meat with selected spices according to ancient recipes. The meat thus takes on flavor without losing its consistency. Salt, garlic, pepper, rosemary, the typical Tuscan essences, are the basis for the salting of this product which matures about three months before being introduced on the market.

Where the air of the Ligurian Sea meets that of the woods that rise towards the Apuan Alps, the most suitable environment is created that allows the cured meats to acquire typical and unmistakable flavors.
Lonzardo has a beautiful bright pink flesh that lends itself to being the queen of the cold cuts platter throughout the year. Perfect for filling a sandwich, Lonzardo is proposed as a flexible salami. Cut into thin slices, it is suitable for preparing delicious finger food filled with soft cheese and herbs. Cut into thicker slices it can become an excellent base for eggs, cut into small squares it can be added to preparations such as muffins and savory donuts.
