The Zuppa Rustica is a mixture of legumes and cereals typical of peasant cuisine. A winter soup but also good cold with spelled, brown rice, peeled broad beans, green and red lentils, cowpeas and black beans.
The Ristica di Bravi Andrea soup is made with legumes that are grown in Garfagnana where the climate makes it possible to obtain top quality materials.The farro della Garfagnana, which in 1996 obtained the recognition of the Protected Geographical Indication (PGI), does not require any chemical treatment growing in its ideal soil between 300 and 1000 m asl
Even the legumes contained in this soup are grown in small plots of Garfagnana and together with the cereals they provide an optimal nutritional supply for the body.
The rustic soup is good served hot to eat with a spoon with a drizzle of extra virgin olive oil, starting with a sautéed onion, garlic, rosemary and sage. and then cooked by adding vegetable broth.
Also try it on two slices of roasted and garlicky Tuscan bread accompanied by a glass of medium-structured Tuscan red wine.

It needs to soak for about 12 hours.
