The salami with olives is one of “flavoured salami” that the Salumificio Artigianale Gombitelli has been producing continuously for many years; the flavoured salamis are: Salami with Olives, Salami with Pistachios, Walnuts Salami and Salami with Pine Nuts.
All these salamis are based on Prosciutto Meat Salami, a sweet and thin salami that is packaged with selected lean meats from lean pork thigh, by adding a fresh piece of pork belly meat; this salami is not too much spiced and to enhance the sweet taste, some honey and Marsala wine are added.
During the mixture, when the meat starts to bind, sweet pitted black olives cut into rounds are added.
The salami with olives for be ready for consumption needs to be matured for at least five weeks, which occurs in well ventilated rooms.
