The Marinated Lard is a delicacy by the Salumificio Artigianale Gombitelli, and a product made by following the Gombitelli’s old traditions. Its invention dates back to the time when there were no refrigerators and the pork was butchered only in the autumn or winter. With the arrival of the warm season, in the absence of refrigerator, the meat suffered the warmth and became yellowish with a rancid taste. To avoid this, the “grandfathers” of the Triglia tried to put the lard in oil, and after years of experience and tests, they obtained the Marinated Lard.
To make the Marinated Lard, we use already salted and seasoned lard. There are selected the parts of the lard-free from the lean streaks and once removed the rind, it is cut into thin slices, arranged in layers in the little glass vases, then there are added spices as garlic, Rosemary, and hot pepper, and all is covered with the extra virgin olive oil.
The Marinated Lard is excellent when served with the toasted bread, if possible warm, therefore, is it perfect for the buffet with the aperitif, and with the cured meat appetizers. This product can also be used in cuisine, for example for sautéing, and it is great as a condiment to make the easy and tasty pasta dishes; perfect to wrap any type of roasted meat.
Gombitelli pink lard (pork lard, salt, pepper, garlic, spices, antioxidant: E300, preservatives: E250-E252), extra virgin olive oil, chilli flakes, rosemary.
Produced in a factory where dairy products and gluten-containing ingredients are not used.
It may contain traces of walnuts and pistachios.
