Spelt Soup


Spelled soup is a mixture of legumes such as borlotti beans and cannellini and spelled beans. A soup called zuppa where the qualities of this ancient creation are combined with the proteins of legumes. It is a poor dish, support of the large families of the past, today the spelled soup has become a dish that the chefs of the area do not fail to put on the menu.

Spelled from Garfagnana, PGI (protected geographical indication) since 1996, is a rustic cultivation that does not require the use of chemical fertilizers, herbicides and insecticides and is therefore naturally organic. A genuine product that has always been cultivated in Garfagnana and combined with typical legumes such as cannellini beans, borlotto, garden vegetables such as celery, carrot, onion and extra virgin olive oil, gives a tasty and healthy dish.

The preparation of this soup lends itself to variations such as the addition of a few leaves of black cabbage deprived of the central part and a potato date. Perfect on winter evenings accompanied by a good glass of Tuscan red wine, it is also interesting in the “lukewarm” version to be served in summer.



Components in variable proportions: borlotti beans, cannellini beans, spelled.

It needs to soak for about 12 hours.

Keep in a cool and dry place.
