For produce Air-cured Fillet, the small and tender fillets are taken from the pork loin, then they are salted and flavored with the mix of spices, like garlic, peppercorns, and special admixture that is used in Valtellina to make the Bresaola. After standing for a short time in refrigerating rooms, the fillets are taken off from the tanks of salting and put seasoning in aired rooms for a few weeks.
The Air-cured Fillet, an absolute delicacy, is characterized by the tenderness of the slice, utter absence of fat, and succulent and sweet taste, moreover, the particular admixture of bresaola donates to it a unique aroma.
