My Grandfather’s Coppa – long seasoned capocollo


My Grandfather’s Coppa is a long seasoned coppa. A coppa where the fat must be well present because it will be the protagonist of this product with a unique and unmistakable flavor.
This Coppa was produced by the Triglia family for personal consumption and for local sale but, given the goodness, today it was decided to offer it to all customers.

The Coppa is a typical salami of Italian production and in Tuscany it has an ancient history that was being lost due to modern tastes. With the rediscovery of true flavors and tradition, the typical cup of family consumption is once again an important piece to bring to the table.

The shape is always cylindrical and the aroma is sweet and characteristic but the long aging makes it closer to a ham in flavor and texture. The knife slips softly but finds the right resistance given by the long and perfect seasoning.

A slow seasoning entrusted to the perfect air of the village of Gombitelli and to time. It takes six to eight months for it to be ready to arrive, with all its load of perfumes, on the tables.

The processing is like that of a normal Coppa. The product is massaged for a long time with salt and various spices, pepper, garlic. This is followed by the rest period necessary for maturation in the salting vat at a controlled temperature. Finally, the meat, now ready, is placed in a natural casing, tied by hand as it used to be in the past and sent to the long seasoning period.
The Coppa of my grandfather is a product with an ancient flavor that will appeal to the most refined connoisseurs but also to those who love and seek authenticity. A product that refers to the tradition of long aging that once accompanied all cured meats. Today, the demand for less incisive products has led producers to reduce the time required for this last but very important stage of production. This is not the case with my grandfather’s Cup as the ancestor would have done.




Pork capocollo, salt, pepper, garlic, flavorings and spices, sugars (dextrose, sucrose), antioxidant: E300, preservatives: E250-E252.

Produced in a factory where dairy products and gluten-containing ingredients are not used.

It may contain traces of walnuts and pistachios.
