Handcrafted by the master butchers of Salumificio Artigianale Gombitelli, this salami is one of the most interesting products born from their hands. The pork loin is a chosen piece from which the part of the lard is not removed. It is salted and massaged with herbs and spices according to the ancient family recipes that are handed down in the salami factory. A base of salt, garlic, rosemary and other herbs and some innovative and modern touches.
After preparation, the most important phase is smoking, which is done here using artisanal methods. A slow process that penetrates the fabric of the meat thanks to a not excessive temperature, which does not cook but gives that delicious hint of wood. This allows the cured meat to obtain a well-balanced smoking that gives this pink meat a more amber color and a strong but not intrusive flavor.
