“S. Lucia ”is a dark colored IGP balsamic vinegar, with a soft and velvety texture on the palate and characterized by the traditional sweet and sour taste.
Balsamic vinegar of Modena PGI is the traditional sweet and sour condiment known throughout the world which since 1965 has been officially recognized with this Protected Geographical Indication (PGI) designation.
Produced in the Acetaia Montale Rangone (MO) the Balsamic Vinegar of Modena “S. Lucia ”is obtained starting from the cooked must, deriving solely from the grapes that grow on the hills around Modena. Following an ancient family recipe, a wine vinegar with a strong and pungent flavor is added to the must, which has been aged in mulberry, chestnut, oak and juniper barrels.
A completely natural and genuine product, free of preservatives, additives or taste enhancers. The Trebbiano, Albana, Sangiovese, Montuni, Lambrusco, Ancellotta and Fortana grapes are harvested at the peak of their ripening process and then subjected to a slow and controlled cooking. Only after tasting by the master tasters is the addition of strong wine vinegar (in a percentage of at least 10%).
Thus begins the rest period that will give life to a unique product. “S. Lucia “is aged in specially dedicated oak barrels for a period of 60 days, at the end of which it is bottled in glass and ready to be put on sale, in full compliance with the health and hygiene regulations in force.
“S. Lucia ”added to salads, meats, risottos gives emotions and will make each dish a special dish.
