Beef in Stone Vat



The Beef in Stone Vat is the only one product that Salumificio Artigianale Gombitelli produces with the beef instead of the pork.

This product has an ancient story in the small town of Gombitelli, this village, until the 1960’s was without streets to link it with other near towns and the supplies travelled only with the mules; the pigs, omnivorous animals, were commonly bred in Gombitelli, but for the beef, the town that was inside the woods, hadn’t  sufficiently space for the pastures, so they had to import the beef meat. But because it was transported with “mule”, the supply happened rarely; in this manner was born the “Beef in Stone Vat”, the salted beef meat adapt for preserving in time.

Today the Salumificio Artigianale Gombitelli produces the Beef  in Stone Vat with the part of the round and the haunch of beef, two of the thinner, with fewer nerves, and more flavoured and tender parts  of the beef.

The salting is done through a delicate and long massage with salt, pepper, cinnamon, laurel, rosemary and a mix of spices that is used in Valtellina to prepare the bresaola. Later, the salted beef is left in salting marble tank to seasoning  for at least one month;  after some days, the formed brine covers completely the product; at the end of the month the beef is turned inside the brine, the slices which were on the surface are put on the bottom, and vice versa. Only after an accurate checking by the “norcino” (butcher), which controls the product and if needed  he will improve it with salt and aromas. After two more weeks of  seasoning, we remove the meat from the brine, cover it  with a mix of spices and the product is ready to be consumed.

To Consume the Beef in Stone Vat, the Triglia family suggests to slice it thinly and match with fresh salad, dropped with extra virgin olive oil and lemon juice; sprinkle all with shavings of well-seasoned Parmeggiano Reggiano or Grana Padano.
