The Bow of Shoulder is a cured meat product from the pork’s “roll of the shoulder”, the leanest and tasty part of the shoulder, it is salted, flavoured with a mix of spices and seasoned. This cured meat is very lean, you can notice it once cut, it has a beautiful bright red colour and an intense and delicate flavour.
To produce the Bow of Shoulder, the “roll of the shoulder” is separated from the rest of shoulder, then it is trimmed of excess fat and we give to it a characteristic oval form. The process of salting occurs through the addition of the mix of spices to the meat, like garlic and pepper, and a vigorous massage of the product is essential because it permits to salt to penetrate in the centre of the meat.
Once salted, the Bow of Shoulder is placed to seasoning in specific salting tanks for about a month; after the first phase of ageing, we add other spices and the meat is put in the net and tied with twine, in order to make the meat more compact and give to it a homogeneous form, it is then hung for maturing in well-aired rooms.
The seasoning time could last from six to eight weeks, depending on the meat’s diameter, and at the end of this period, the product is ready for consumption.
The Bow of Shoulder is a perfect product for appetizer buffet, with starter dishes of cured meats, and for filling sandwiches and focaccia bread.
